Black Bean & Sweet Corn Salsa

Holy goodness! I was in need of something fresh, light, and down right tasty. I knew what I wanted and began googling. Yes, I googled.

Last night I made a big batch of black bean and sweet corn salsa. I love it because you can eat it will chips, on a toasted english muffin, or just plain with a spoon! As far as I am concerned, this is a low-calorie snack that is perfect for the summer months :)
1 can black beans1 can sweet yellow corn
1 can small white beans
1 red bell pepper (diced small)
1 jalapeno (diced small)
1/2 red onion (diced small)
1/2 cup balsamic vinaigrette
1/3 cup olive oil
2-3 sticks parsley chopped for flavor

However, not all good things came out of this salsa. When I was chopping the jalapeno, the second I started I knew what I had done wrong...I touched the inside of the jalapeno with bare fingers :( I then touched my nose, and my nose started burning. This morning I was supposed to take Derrick to the airport at 5:30 am..well, that didn't happen. I went to put in my contacts and the pain was so bad I couldn't open my eyes, not even to get my contacts out, let alone drive. It was awful. I think tonight I will have to sleep in my contacts to avoid that intense of a feeling again. Because of my 5:30 am experience, I have felt off all day today, kind of sick to my stomach. Oh well - Such a learning experience!

That is terrible about your eyes! Burning eyes are such a bad feeling.
The black bean salsa you made is similar to somthing I make called Texas Caviar... it is always a huge hit at parties. I use Hendrickson's salad dressing which makes it tangy and sweet. It's always fun to change up the ingredients each time I make it.
