Date Night with Jackson & Amy!

Wednesday was rainy, rainy, rainy! However, me and my girlfriends were headed out to see Jackson & Amy after work!!! Maria was cooking dinner and invited me, Julie, and Lo out to also enjoy it! We always meet at Julie's to jump on 44 because it's just convenient for everyone. Since I was up that way, I stopped and picked up all of the bridesmaid dresses for all my girls! They look great (because Amy tried her's on!), and that is just one more thing to check off the list! Anyway, I met Julie and Lo at Julie's and it was pouring down rain, so it took a little longer to get out to O'Fallon. Which, was not a big deal because when you get me, Julie, and Lo in the same car, there's never a silent moment :) (Seriously.) When we got to Amy's, we had to get all the Jackson we could because it was passed his bedtime :(


While we were waiting for dinner to finish baking, Maria had made an excellent corn, black bean, and veggie salsa with red wine vinegrette. Very low-cal and so good, I could have finished it with a spoon! Definately a recipe that I am going to get! Maria also made a batch of beef enhildilas and a great salad to go along! It was a very good dinner, I love Mexican themed meals! For dessert, Lo made low-cal pudding with strawberries on top! It was so good, I took one to go!

It was really good to see my friends and catch-up. Amy and Josh are building a house that will be c0mplete in November. Julie is doing really well at her sales job, Maria has recently started a new job that she really enjoys (Maria, in my opinion, has a great work ethic) and Lo is still working at Elements of Denim. Lo had on a pair of really cute white jeans from her store last night too :) Jackson is cuter than ever, he is 8 months old now! I just can't believe how time flys by! Amy has taken a babysitting job part-time, in which she can take Jackson with her. Overall, everyone is doing really well, and it was a nice little evening!
