Since Derrick and I missed Valentines Day Sunday - due to a very long car ride, we sat down Monday evening for a nice dinner. I made a new recipe out of one of my Rachael Ray magazines. The recipe consisted of hot and spicy sausage, peppers, tomato sauce, cream cheese, and whole wheat pasta. Overall, rather healthy, other than the sausage - but the spicy sausage really made it. Derrick and I were both off Monday, so I took advantage of going to the gym, cleaning, grocery shopping, and driving out to pick up Beetles from my parents house. Having Monday off, really does make the week go by fast, can't believe tomorrow is Thursday! Yes! I am stoked for a low-key weekend ;)
Lately, I have really concentrated on making some of my own food, what I'm eating, and how much - not only for a $ saver, but also for the health fact. Everyone knows that I am in oatmeal FREAK (I eat it everyday, for breakfast, and 4 out of the 5 nights for dinner...) I load it though...banana, raisins, granola, honey, almond butter, and blueberries :) I'm also focusing on lots of fruit, and hot tea, opposed to coffee. (Even though I do need a little coffee now and again, I let myself go to Starbucks 1-2 times per week.) Below is my recipe for homemade granola bars, I always make a double batch. I got this recipe off another blog I follow, it's so good, I must share :)

I think I will start adding recipes to my blog, I really enjoy cooking - for myself, for others, for my husband! I also love entertaining my family & friends, maybe that's where the passion for cooking comes in?

Ingredients
- 1.5 cups rolled oats
- 1/2 cup chopped nuts - (I've been chopping almonds in my Slap Chop)
- 3/4 cup dried fruit - (You must be careful with this. Try and find the 'no fat' dried fruit)
- 1 1/2 skim
- 1 egg
- 1 tsp vanilla
- 1/2 brown sugar - (for the sweetness, the only other sweetness comes from the fruit)
Method
- Preheat oven to 350*
- Mix dry ingredients
- Mix wet ingredients
- Pour wet into dry, stir
- Pour into 9x13 baking dish - (I have found that using parchment paper doesn't work as well, than just spraying the pan)
- Bake for 45 minutes
- Cut into bars
